Ingredients:
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup strawberry jam
- Powdered sugar (for dusting, optional)
Directions:
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, vegetable oil, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Spoon about 1 tablespoon of batter into each muffin cup.
- Add 1 teaspoon of strawberry jam to the center of each muffin cup.
- Top with more batter until each muffin cup is about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar before serving, if desired.
