Quick Strawberry Jam-Filled Muffins


  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam
  • Powdered sugar (for dusting, optional)


  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, vegetable oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Spoon about 1 tablespoon of batter into each muffin cup.
  6. Add 1 teaspoon of strawberry jam to the center of each muffin cup.
  7. Top with more batter until each muffin cup is about 3/4 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  10. Dust with powdered sugar before serving, if desired.
