Directions:
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, beat the egg with milk and vegetable oil. Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the shredded mozzarella cheese, mini pepperoni slices, grated Parmesan cheese, and Italian seasoning.
- Grease the waffle iron with non-stick spray or a small amount of vegetable oil. Pour the batter onto the preheated waffle iron and cook according to the manufacturer’s instructions until golden and crispy.
- Serve hot with a side of pizza sauce for dipping.
