Peanut Butter Cake with Peanut Butter Frosting

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

For the Frosting:

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/4 cup heavy cream (more if needed)
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat the softened butter and peanut butter together until creamy and smooth. Add the granulated sugar and continue beating until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the frosting, beat the peanut butter and softened butter together until creamy. Gradually add the powdered sugar, mixing until smooth. Add the heavy cream and vanilla extract, and beat until light and fluffy. Add more cream if needed to reach desired consistency.
  9. Frost the cooled cakes, layering one on top of the other and covering the entire cake with the peanut butter frosting.
