No Roll Sugar Cookies

  1. Ingredients:
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 to 4 tablespoons buttermilk
  • Additional sugar for sprinkling

Directions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  3. In a large bowl, cream together the butter and 1 1/2 cups sugar until smooth. Beat in egg and vanilla extract. Gradually blend in the dry ingredients, adding just enough buttermilk to moisten the dough and make it soft, not wet.
  4. Drop rounded teaspoons of dough onto the prepared baking sheet. Slightly flatten the dough with the bottom of a glass dipped in sugar.
  5. Bake for 8 to 10 minutes in the preheated oven, or until golden. Let stand on the cookie sheet for two minutes before removing to cool on wire racks.
