- Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 tablespoons sugar
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 1 cup sour cream
- 1/2 cup strawberry puree
- 1/2 cup fresh strawberries, sliced
- 1/4 cup strawberry jam
Directions:
- Preheat your oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons sugar; press into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth. Add 1 cup sugar and vanilla, and beat until creamy.
- Add eggs one at a time, beating well after each addition. Fold in sour cream and strawberry puree.
- Pour the cream cheese mixture over the crust in the pan.
- Drop dollops of strawberry jam over the surface and use a knife to swirl into the filling.
- Bake for 55-60 minutes or until set. Turn off the oven, let the cheesecake sit in the oven with the door slightly open for 1 hour.
- Chill in the refrigerator for at least 4 hours before serving. Garnish with fresh strawberry slices.
