Low-Carb Bacon Cheeseburger Casserole

Ingredients:

  • 1 lb ground beef
  • 6 slices bacon, chopped
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped pickles (optional)

Directions:

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish and set aside.
  2. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove from the skillet and drain on paper towels.
  3. In the same skillet, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
  4. In a medium bowl, whisk together the eggs, heavy cream, Dijon mustard, Worcestershire sauce, salt, and black pepper.
  5. Spread the cooked beef mixture evenly in the prepared baking dish. Sprinkle the cooked bacon over the top.
  6. Pour the egg mixture over the beef and bacon, then sprinkle the shredded cheddar and mozzarella cheeses evenly over the top.
  7. Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the cheese is melted and bubbly.
  8. Let cool for a few minutes before serving. Garnish with chopped pickles if desired.
