Lemon brownies


  • 3/4 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 tablespoons lemon zest
  • 2 tablespoons lemon juice
  • 1/2 teaspoon vanilla extract
  • For the Lemon Glaze:
    • 1 cup powdered sugar
    • 2-3 tablespoons lemon juice


  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line with parchment paper.
  2. In a large bowl, cream together the butter, sugar, and salt until light and fluffy.
  3. Beat in eggs, one at a time, then stir in lemon zest, lemon juice, and vanilla extract.
  4. Gradually add flour, mixing until just incorporated.
  5. Pour the batter into the prepared baking dish, smoothing the top with a spatula.
  6. Bake for 20-25 minutes, or until the edges are light golden and a toothpick inserted in the center comes out clean.
  7. While the brownies are baking, whisk together powdered sugar and lemon juice to create the glaze.
  8. Allow the brownies to cool slightly in the pan, then pour the glaze over the warm brownies.
  9. Let the glaze set before slicing and serving.
