Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 6 tablespoons unsalted butter, cold and cut into small pieces
- 3/4 cup buttermilk, cold
- 1 tablespoon honey (optional, for brushing)
Directions:
- Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.
- Make a well in the center of the mixture and pour in the cold buttermilk. Stir until just combined and a dough forms.
- Turn the dough out onto a lightly floured surface and gently knead it a few times. Pat the dough into a rectangle about 1/2 inch thick.
- Fold the dough over onto itself in thirds (like folding a letter) and then pat it out
