  1. Ingredients:
    • 1 1/2 cups rolled oats
    • 1 cup whole wheat flour
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/4 cup coconut oil, melted
    • 1/4 cup honey or maple syrup
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1/2 cup unsweetened applesauce
    • 1/2 cup dark chocolate chips or chunks
    • 1/4 cup chopped nuts (optional)
    • 1/4 cup dried cranberries or raisins (optional)

    Directions:

    1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
    2. In a large bowl, mix together rolled oats, whole wheat flour, baking soda, baking powder, salt, and ground cinnamon.
    3. In another bowl, whisk together melted coconut oil, honey or maple syrup, egg, vanilla extract, and unsweetened applesauce until well combined.
    4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in dark chocolate chips, nuts, and dried cranberries or raisins if using.
