German Potato Pancakes

Ingredients:

  • 4 large potatoes, peeled
  • 1 medium onion
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying
  • Applesauce and sour cream, for serving

Directions:

  1. Grate the potatoes and onion into a large bowl using the coarse side of a grater.
  2. Squeeze out as much liquid as possible from the grated potatoes and onion using a clean cloth or by pressing them in a sieve.
  3. Return the dry mixture to the bowl and stir in the eggs, flour, salt, and pepper until well combined.
  4. Heat oil in a large skillet over medium-high heat.
  5. Scoop large spoonfuls of the potato mixture into the skillet, flattening them with the back of the spoon to form pancakes.
  6. Fry for about 3-4 minutes on each side or until the pancakes are golden brown and crispy.
  7. Drain on paper towels.
  8. Serve hot with applesauce and sour cream.
