Ingredients:
- 4 large potatoes, peeled
- 1 medium onion
- 2 eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Oil for frying
- Applesauce and sour cream, for serving
Directions:
- Grate the potatoes and onion into a large bowl using the coarse side of a grater.
- Squeeze out as much liquid as possible from the grated potatoes and onion using a clean cloth or by pressing them in a sieve.
- Return the dry mixture to the bowl and stir in the eggs, flour, salt, and pepper until well combined.
- Heat oil in a large skillet over medium-high heat.
- Scoop large spoonfuls of the potato mixture into the skillet, flattening them with the back of the spoon to form pancakes.
- Fry for about 3-4 minutes on each side or until the pancakes are golden brown and crispy.
- Drain on paper towels.
- Serve hot with applesauce and sour cream.
