Garlic & Lemon Chicken with Green Beans & Red Potatoes


  • 4 boneless, skinless chicken breasts
  • 1 lb green beans, trimmed
  • 1 lb red potatoes, quartered
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


  1. Preheat oven to 400°F (200°C). Grease a large baking sheet or line it with parchment paper.
  2. In a small bowl, whisk together minced garlic, olive oil, lemon juice, lemon zest, dried oregano, dried thyme, salt, and pepper.
  3. Place the chicken breasts, green beans, and red potatoes on the prepared baking sheet. Drizzle the garlic and lemon mixture over the top, ensuring everything is evenly coated.
  4. Toss the vegetables and chicken to coat them well with the seasoning.
  5. Spread the chicken, green beans, and potatoes in a single layer on the baking sheet.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C), and the potatoes are tender.
  7. Garnish with chopped fresh parsley before serving.
