Directions:
- Preheat oven to 400°F (200°C). Grease a large baking sheet or line it with parchment paper.
- In a small bowl, whisk together minced garlic, olive oil, lemon juice, lemon zest, dried oregano, dried thyme, salt, and pepper.
- Place the chicken breasts, green beans, and red potatoes on the prepared baking sheet. Drizzle the garlic and lemon mixture over the top, ensuring everything is evenly coated.
- Toss the vegetables and chicken to coat them well with the seasoning.
- Spread the chicken, green beans, and potatoes in a single layer on the baking sheet.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C), and the potatoes are tender.
- Garnish with chopped fresh parsley before serving.
