Fried Strawberry Shortcake Pops

Ingredients:

  • 1 pound fresh strawberries, hulled and halved
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 tablespoons cold butter, cubed
  • 3/4 cup whole milk
  • 1 quart oil for frying
  • 1/2 cup powdered sugar for dusting
  • Wooden skewers

Directions:

  1. In a bowl, toss the strawberries with granulated sugar and set aside for 15 minutes to macerate.
  2. In another bowl, combine flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add milk to form a soft dough.
  3. On a floured surface, roll the dough to 1/2 inch thickness. Cut into small circles using a biscuit cutter.
  4. Skewer the macerated strawberries with wooden skewers, alternating with the dough circles.
  5. Heat the oil in a deep fryer or large pot to 375°F (190°C).
  6. Fry the skewered pops until golden brown, about 2-3 minutes per side. Drain on paper towels.
  7. Dust with powdered sugar before serving.
