Easy Dorito Casserole


  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (10 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend
  • 1 bag (10.5 oz) Nacho Cheese Doritos, crushed
  • 1 small onion, chopped
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) sliced black olives (optional)
  • Fresh cilantro, chopped (for garnish)


  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
  3. Add the taco seasoning mix, diced tomatoes with green chilies, cream of chicken soup, and sour cream to the skillet. Stir until well combined and heated through.
  4. In the greased baking dish, layer half of the crushed Doritos. Pour the beef mixture over the Doritos and spread evenly.
  5. Layer the drained corn and sliced black olives (if using) over the beef mixture. Sprinkle 1 cup of the shredded Mexican cheese blend over the top.
  6. Add the remaining crushed Doritos over the cheese layer, then top with the remaining 1 cup of shredded cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Garnish with fresh cilantro before serving.
