Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (10 oz) cream of chicken soup
- 1 cup sour cream
- 2 cups shredded Mexican cheese blend
- 1 bag (10.5 oz) Nacho Cheese Doritos, crushed
- 1 small onion, chopped
- 1 can (15 oz) corn, drained
- 1 can (4 oz) sliced black olives (optional)
- Fresh cilantro, chopped (for garnish)
Directions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
- Add the taco seasoning mix, diced tomatoes with green chilies, cream of chicken soup, and sour cream to the skillet. Stir until well combined and heated through.
- In the greased baking dish, layer half of the crushed Doritos. Pour the beef mixture over the Doritos and spread evenly.
- Layer the drained corn and sliced black olives (if using) over the beef mixture. Sprinkle 1 cup of the shredded Mexican cheese blend over the top.
- Add the remaining crushed Doritos over the cheese layer, then top with the remaining 1 cup of shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
