Ingredients
- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

Instructions
- Heat the oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until lightly browned on all sides, about 5–6 minutes. Remove the chicken and set aside.
- In the same skillet, add the diced onion and cook until softened, about 3–4 minutes.
- Add the garlic and ginger, then stir for about 30 seconds until fragrant.
- Pour in the coconut milk, soy sauce, honey, curry powder, and red pepper flakes. Stir well and bring the mixture to a gentle simmer.
- Return the chicken to the skillet. Reduce the heat to medium-low and simmer for 10–12 minutes, stirring occasionally, until the chicken is fully cooked and the sauce has slightly thickened.
- While the chicken cooks, prepare the rice if it is not already cooked.
