Cucumber Grape Salad

  1. Ingredients:
    • 2 cups seedless green grapes, halved
    • 2 cups seedless red grapes, halved
    • 2 large cucumbers, thinly sliced
    • 1/2 red onion, thinly sliced
    • 1/4 cup fresh dill, chopped
    • 1/4 cup fresh mint, chopped
    • 1/4 cup feta cheese, crumbled
    • 1/4 cup olive oil
    • 2 tablespoons apple cider vinegar
    • 1 tablespoon honey
    • Salt and pepper to taste

    Directions:

    1. In a large bowl, combine the halved grapes, sliced cucumbers, and red onion.
    2. Add the chopped dill, mint, and crumbled feta cheese.
    3. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
    4. Pour the dressing over the salad and toss gently to combine.
    5. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
