Creamy Shrimp Chowder

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 3 potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1 teaspoon Old Bay seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Directions:

  1. In a large pot, melt the butter over medium heat. Add the onion, garlic, celery, and carrots. Sauté until the vegetables are tender, about 5 minutes.
  2. Add the potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
  3. Stir in the heavy cream, milk, and Old Bay seasoning. Simmer for another 5 minutes.
  4. Add the shrimp to the pot and cook until they are pink and cooked through, about 3-4 minutes.
  5. Season with salt and black pepper to taste.
  6. Garnish with chopped fresh parsley before serving.
