Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 tablespoons butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 celery stalks, diced
- 2 carrots, diced
- 3 potatoes, peeled and cubed
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup milk
- 1 teaspoon Old Bay seasoning
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
Directions:
- In a large pot, melt the butter over medium heat. Add the onion, garlic, celery, and carrots. Sauté until the vegetables are tender, about 5 minutes.
- Add the potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
- Stir in the heavy cream, milk, and Old Bay seasoning. Simmer for another 5 minutes.
- Add the shrimp to the pot and cook until they are pink and cooked through, about 3-4 minutes.
- Season with salt and black pepper to taste.
- Garnish with chopped fresh parsley before serving.
