Cinnamon Raisin Bread Pudding

  1. Ingredients:
    • 6 cups cubed day-old cinnamon raisin bread
    • 2 cups whole milk
    • 1 cup heavy cream
    • 1/2 cup granulated sugar
    • 1/2 cup brown sugar
    • 4 large eggs
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/2 cup raisins
    • 1/4 cup melted butter

    Directions:

    1. Preheat the oven to 350°F (175°C).
    2. Grease a 9×13 inch baking dish.
    3. In a large bowl, combine the cubed cinnamon raisin bread and raisins.
    4. In a separate bowl, whisk together the milk, heavy cream, granulated sugar, brown sugar, eggs, vanilla extract, ground cinnamon, and ground nutmeg.
    5. Pour the mixture over the bread cubes and gently stir to coat all the bread.
    6. Let the mixture sit for 10-15 minutes to allow the bread to soak up the liquid.
    7. Pour the bread mixture into the prepared baking dish and drizzle the melted butter over the top.
    8. Bake for 45-50 minutes, or until the top is golden brown and the pudding is set.
    9. Let cool slightly before serving. Optionally, serve with a drizzle of vanilla sauce or a scoop of vanilla ice cream.
