Chicken with Buttered Noodles


  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1/2 pound egg noodles
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese


  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden brown on both sides and cooked through, about 6-8 minutes per side.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the chicken broth, white wine, and garlic. Bring to a boil, then reduce the heat and simmer until the liquid is reduced by half.
  5. Meanwhile, cook the egg noodles according to package instructions, then drain.
  6. Toss the noodles with butter, parsley, and Parmesan cheese.
  7. Slice the chicken and serve over the buttered noodles.
