Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- 1/4 cup white wine (optional)
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1/2 pound egg noodles
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese
Directions:
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden brown on both sides and cooked through, about 6-8 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the chicken broth, white wine, and garlic. Bring to a boil, then reduce the heat and simmer until the liquid is reduced by half.
- Meanwhile, cook the egg noodles according to package instructions, then drain.
- Toss the noodles with butter, parsley, and Parmesan cheese.
- Slice the chicken and serve over the buttered noodles.
