Cheesy Taco Cream Cheese Pasta

  1. Ingredients:
  • 12 oz pasta (such as penne or fusilli)
  • 1 lb ground beef
  • 1 package taco seasoning
  • 8 oz cream cheese, softened
  • 1 cup salsa
  • 1 cup cheddar cheese, shredded
  • 1/2 cup milk
  • 1 green bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Directions:

  1. Cook pasta according to package instructions until al dente; drain and set aside.
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add the taco seasoning, bell pepper, onion, and garlic to the skillet with the beef and cook for about 5 minutes until vegetables are soft.
  4. Lower the heat and add the cream cheese, salsa, and milk to the skillet, stirring until the cream cheese is melted and the sauce is smooth.
  5. Toss the cooked pasta with the sauce, then stir in the cheddar cheese until melted.
  6. Garnish with fresh cilantro before serving.
