Cajun Shrimp Scampi

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 8 oz linguine or spaghetti
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup white wine or chicken broth
  • 1/4 cup lemon juice
  • 1 tablespoon Cajun seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • Lemon wedges, for garnish

Directions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, melt the butter and olive oil over medium heat.
  3. Add the minced garlic and sauté for about 1 minute, until fragrant.
  4. Add the shrimp to the skillet, seasoning with Cajun seasoning, crushed red pepper flakes, salt, and pepper. Cook until the shrimp turn pink and are opaque, about 3-4 minutes.
  5. Remove the shrimp from the skillet and set aside.
  6. In the same skillet, add the white wine (or chicken broth) and lemon juice. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to reduce slightly.
  7. Return the shrimp to the skillet and toss to coat in the sauce.
  8. Add the cooked pasta to the skillet and toss everything together until well combined.
  9. Garnish with chopped parsley and lemon wedges before serving.
