Bologna Salad Recipe

Ingredients:

  • 1 lb bologna, diced
  • 3 hard-boiled eggs, chopped
  • 1/2 cup sweet pickle relish
  • 1/4 cup red onion, finely chopped
  • 1 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 teaspoon celery seed
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Directions:

  1. In a large bowl, combine diced bologna, chopped eggs, sweet pickle relish, and finely chopped red onion.
  2. In a separate small bowl, mix together the mayonnaise, yellow mustard, celery seed, salt, and black pepper.
  3. Pour the mayonnaise mixture over the bologna mixture and stir until everything is well combined.
  4. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  5. Garnish with chopped fresh parsley before serving.
