Blueberry Buckle

  1. Ingredients:
  • 3/4 cup sugar
  • 1/4 cup butter, softened
  • 1 egg
  • 1/2 cup milk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh blueberries

For the topping:

  • 1/2 cup sugar
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/4 cup butter, chilled and diced

Directions:

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch square baking pan.
  2. Cream together sugar, 1/4 cup butter, and egg until smooth. Stir in milk. Mix in 2 cups flour, baking powder, and salt until just combined. Fold in blueberries. Spread batter into prepared pan.
  3. For the topping, combine 1/2 cup sugar, 1/3 cup flour, and cinnamon in a bowl. Cut in 1/4 cup chilled butter until the mixture resembles coarse crumbs. Sprinkle over the batter in the pan.
  4. Bake for 35-40 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean. Allow to cool before serving.
