Ingredients:
For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 4-6 tablespoons ice water
For the Filling:
- 1 1/2 cups sugar
- 3 tablespoons all-purpose flour
- 3 large eggs
- 1 cup buttermilk
- 1/2 cup unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
For Garnish:
- Powdered sugar (optional)
- Fresh berries (optional)
Directions:
- Make the Crust:
- In a large bowl, combine the flour and salt. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish, trim the edges, and crimp as desired.
- Make the Filling:
- In a large bowl, whisk together sugar and flour. Add eggs and beat until well combined.
- Stir in buttermilk, melted butter, vanilla extract, nutmeg, and salt until smooth.
- Pour the filling into the prepared pie crust.
- Bake for 45-50 minutes, or until the filling is set and the top is golden brown. A knife inserted into the center should come out clean.
- Let the pie cool completely on a wire rack before slicing.
- Garnish with a dusting of powdered sugar and fresh berries, if desired.
