Instructions

  5. Spread about 2 tablespoons of refried beans down the center of each tortilla. Add a generous scoop of the beef mixture (about ⅓ cup) and sprinkle with shredded cheese.
  6. Fold in the sides of the tortilla, then roll tightly from the bottom up like a burrito. Place each chimichanga seam-side down on the prepared baking sheet.
  7. Lightly brush the tops and sides with oil or melted butter. This helps create a crispy golden texture.
  8. Bake for 18–22 minutes, flipping once halfway through, until the chimichangas are crispy and golden on all sides.
  9. Let them rest for 2 minutes before serving.
