Baklava Muffins

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup Greek yogurt
  • 1 cup chopped walnuts
  • 1 teaspoon cinnamon
  • 1/4 cup honey
  • 1/4 cup chopped pistachios (optional for topping)

Directions:

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time
