Ingredients:
- 2 cans (8 oz each) refrigerated cinnamon rolls, divided
- 2 large apples, peeled, cored, and chopped
- 1 cup chopped pecans
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 cup butter, melted
- 1/2 cup brown sugar
- 1/2 teaspoon vanilla extract
Directions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Cut each cinnamon roll into quarters and set the icing aside.
- In a large bowl, combine the chopped apples, chopped pecans, granulated sugar, and ground cinnamon. Mix well.
- Add the quartered cinnamon rolls to the bowl and toss to coat evenly with the apple mixture.
- Spread the mixture evenly in the prepared baking dish.
- In a small saucepan, combine the melted butter, brown sugar, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture is smooth and the sugar is dissolved.
- Pour the butter mixture evenly over the cinnamon roll and apple mixture.
- Bake for 30-35 minutes, or until the cinnamon rolls are golden brown and the apples are tender.
- Drizzle the reserved icing over the top of the bake. Serve warm.
