Instructions

  1. Wash the zucchinis under cool running water and pat them dry with a clean kitchen towel.
  2. Use a spiralizer, vegetable peeler, or mandoline slicer to turn the zucchinis into noodles.
  3. Place the zucchini noodles in a colander and sprinkle with salt. Let them sit for about 15-20 minutes to draw out excess moisture.
  4. Gently pat the noodles dry with a paper towel.
  5. In a large skillet, heat the olive oil over medium heat.
  6. Add the zucchini noodles to the skillet and sprinkle with black pepper, garlic powder, and Italian seasoning. Toss gently and cook for about 3-5 minutes.
  7. If desired, sprinkle grated Parmesan cheese over the top in the last minute of cooking.
  8. Remove the skillet from heat and serve hot, garnished with fresh basil leaves if desired.
