- 4 medium zucchinis
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning (or your favorite herbs)
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil leaves for garnish (optional)
Instructions
- Wash the zucchinis under cool running water and pat them dry with a clean kitchen towel.
- Use a spiralizer, vegetable peeler, or mandoline slicer to turn the zucchinis into noodles.
- Place the zucchini noodles in a colander and sprinkle with salt. Let them sit for about 15-20 minutes to draw out excess moisture.
- Gently pat the noodles dry with a paper towel.
- In a large skillet, heat the olive oil over medium heat.
- Add the zucchini noodles to the skillet and sprinkle with black pepper, garlic powder, and Italian seasoning. Toss gently and cook for about 3-5 minutes.
- If desired, sprinkle grated Parmesan cheese over the top in the last minute of cooking.
- Remove the skillet from heat and serve hot, garnished with fresh basil leaves if desired.

- For a gluten-free option, omit the Parmesan cheese or use a dairy-free alternative.
