Instructions
- Preheat your oven to 400°F (200°C).
- Slice the eggplants into 1/2 inch thick rounds.
- Sprinkle salt over the slices and let them sit for about 20 minutes to draw out excess moisture.
- In a bowl, mix the breadcrumbs, Parmesan cheese (if using), dried herbs, and garlic powder.
- Rinse the salted eggplant slices under cold water to remove excess salt and bitterness, then pat them dry with paper towels.
- Coat the eggplant slices in the breadcrumb mixture and press gently to adhere.
- Arrange the coated eggplant slices in a single layer on a baking sheet lined with parchment paper.
- Lightly spray or drizzle olive oil over the slices.
- Bake for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the oven and allow to cool for a few minutes before serving.
- Enjoy as a snack or with your favorite dipping sauce.
