Description
Ultimate Birria Tacos are a delicious Mexican dish featuring tender, shredded beef served in warm corn tortillas, garnished with fresh cilantro and lime.

- 2 lbs beef chuck roast, cut into chunks
- 4 pieces dried guajillo chiles, seeds removed
- 2 pieces dried ancho chiles, seeds removed
- 1 whole onion, chopped
- 4 cloves garlic
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 4 cups beef broth
- 2 pieces bay leaves

- 12 pieces corn tortillas
- 1/2 cup fresh cilantro, chopped (for garnish)
- 2 pieces Lime wedges (for serving)
Instructions
- Start by boiling the guajillo and ancho chiles in hot water for about 15 minutes until softened. Remove from heat and let them cool.
- In a blender, combine the softened chiles, chopped onion, garlic, cumin, oregano, salt, and pepper. Add a bit of the beef broth to help blend until you have a smooth sauce.
- In a large pot, add the beef chunks along with the blended sauce and the remaining beef broth. Toss in the bay leaves and bring the mixture to a gentle simmer.
- Cover the pot and let it simmer for 2-3 hours or until the beef is tender and shreds easily with a fork.
- Once the beef is cooked, use two forks to shred it into bite-sized pieces. Adjust seasoning as needed.
- Warm the corn tortillas individually in a skillet. Fill each tortilla with a generous amount of the shredded beef.
- Top with fresh cilantro and serve with lime wedges on the side. You can also provide a bowl of the cooking broth as a dipping sauce.
