Description

Ultimate Birria Tacos are a delicious Mexican dish featuring tender, shredded beef served in warm corn tortillas, garnished with fresh cilantro and lime.


Ingredients

  • 2 lbs beef chuck roast, cut into chunks
  • 4 pieces dried guajillo chiles, seeds removed
  • 2 pieces dried ancho chiles, seeds removed
  • 1 whole onion, chopped
  • 4 cloves garlic
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 4 cups beef broth
  • 2 pieces bay leaves
  • to taste Salt and pepper
  • 12 pieces corn tortillas
  • 1/2 cup fresh cilantro, chopped (for garnish)
  • 2 pieces Lime wedges (for serving)

Instructions

  1. Start by boiling the guajillo and ancho chiles in hot water for about 15 minutes until softened. Remove from heat and let them cool.
  2. In a blender, combine the softened chiles, chopped onion, garlic, cumin, oregano, salt, and pepper. Add a bit of the beef broth to help blend until you have a smooth sauce.
  3. In a large pot, add the beef chunks along with the blended sauce and the remaining beef broth. Toss in the bay leaves and bring the mixture to a gentle simmer.
  4. Cover the pot and let it simmer for 2-3 hours or until the beef is tender and shreds easily with a fork.
  5. Once the beef is cooked, use two forks to shred it into bite-sized pieces. Adjust seasoning as needed.
  6. Warm the corn tortillas individually in a skillet. Fill each tortilla with a generous amount of the shredded beef.
  7. Top with fresh cilantro and serve with lime wedges on the side. You can also provide a bowl of the cooking broth as a dipping sauce.
