Turkish Pide is a delicious and traditional dish that features a boat-shaped flatbread filled with a savory mixture of ground meat, vegetables, and spices.

- 4 cups all-purpose flour
- 1 packet (2 and 1/4 teaspoons) active dry yeast
- 1 teaspoon sugar
- 1 and 1/2 teaspoons salt
- 1 cup warm water (about 110°F)
- 2 tablespoons olive oil
- 1 cup ground beef or lamb (or a mix of both)
- 1 medium onion, finely chopped
- 1 bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup diced tomatoes (fresh or canned)
- 1/2 cup chopped fresh parsley
- 1 cup shredded mozzarella cheese (optional)
- 1 egg (for egg wash)
- Sesame seeds (optional)
Instructions
- In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 to 10 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture along with the olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 8 to 10 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
- While the dough is rising, prepare the filling by sautéing the onion and bell pepper in olive oil until soft, about 5 minutes. Add garlic and cook for another minute.
- Stir in the ground meat and cook until browned. Season with cumin, paprika, salt, and pepper. Add diced tomatoes and simmer for about 5 minutes until thickened. Stir in parsley and cheese if using.
- Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into an oval shape, about 1/4 inch thick.
- Place the ovals on a baking sheet lined with parchment paper. Spoon the filling down the center of each oval, leaving a border around the edges.
- Fold the edges over the filling, pinching them together to create a boat shape.
- Preheat the oven to 475°F (245°C). Beat the egg and brush it over the edges of the pide. Sprinkle sesame seeds on top if desired.
- Bake the pide for about 15 to 20 minutes, or until the crust is golden brown and crispy.
- Let them cool for a few minutes before slicing. Serve warm and enjoy!
Notes
- For a vegetarian option, substitute the meat with a mix of vegetables or lentils.
- Feel free to customize the filling with your favorite ingredients.
