Ingredients

  • 2 cups ripe tomatoes, diced (or one 14-ounce can of diced tomatoes)
  • 1 cup cottage cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 pound pasta of your choice (spaghetti, penne, or fusilli work great)
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Cook your pasta according to the package instructions in a large pot of salted boiling water, stirring occasionally. Reserve about 1 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
  3. Add minced garlic and cook for an additional minute, stirring frequently.
  4. Add diced tomatoes to the skillet. If using fresh tomatoes, cook for 5-7 minutes until softened. If using canned tomatoes, just heat through.
  5. Stir in dried basil, oregano, and red pepper flakes (if using). Season with salt and pepper to taste. Let simmer for about 10 minutes.
  6. Add cottage cheese and stir until well combined. If the sauce is too thick, gradually add reserved pasta water to reach desired consistency.
  7. Toss in the cooked pasta, ensuring every piece is coated in the sauce. Cook together for another minute or two.
  8. Serve hot, garnished with fresh basil leaves if desired.
