Ingredients

  • 1 pound boneless, skinless chicken thighs or breasts
  • 1/4 cup soy sauce
  • 1/4 cup mirin (sweet rice wine)
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 cups cooked jasmine rice or brown rice
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers (any color)
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • Sesame seeds for garnish (optional)

Instructions

  1. Marinate the chicken by whisking together soy sauce, mirin, brown sugar, sesame oil, garlic, and ginger in a bowl. Add chicken and coat well. Cover and refrigerate for at least 30 minutes.
  2. Steam the broccoli florets until bright green and tender-crisp, about 3-4 minutes. Set aside.
  3. Heat a splash of oil in a large skillet or wok over medium-high heat. Remove chicken from marinade and add to the skillet. Cook for 5-7 minutes on each side until cooked through and golden.
  4. Remove chicken from skillet and let it rest for a few minutes before slicing into bite-sized pieces.
  5. In the same skillet, pour in the reserved marinade. Mix cornstarch and water in a small bowl until smooth, then add to the skillet. Simmer and stir until sauce thickens, about 2-3 minutes.
  6. Assemble the bowls by starting with a scoop of rice, layering on sliced chicken, steamed broccoli, bell peppers, and shredded carrots. Drizzle with teriyaki sauce and garnish with green onions and sesame seeds.
