- 8 ounces of elbow macaroni or your favorite pasta
- 1 pound ground beef (or turkey for a lighter option)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (about 1 ounce)
- 1 can (15 ounces) diced tomatoes with green chilies
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 2 cups beef broth (or chicken broth)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Salt and pepper to taste
- Chopped fresh cilantro for garnish (optional)
Instructions
- Start by cooking the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, brown the ground beef, breaking it up with a spoon as it cooks. Once it’s no longer pink, drain any excess fat.
- Add the diced onion and minced garlic to the skillet with the meat. Sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant.
- Sprinkle the taco seasoning over the meat mixture and stir to combine. Pour in the diced tomatoes (with their juices), black beans, corn, and beef broth. Stir everything together and bring it to a gentle simmer.
- Let the mixture simmer for about 5-7 minutes, allowing the flavors to meld together. If it gets too thick, feel free to add a splash more broth.
- Once the sauce is ready, add the cooked pasta to the skillet and stir until the pasta is well coated with the sauce.
- Remove the skillet from heat and stir in the shredded cheddar cheese until it’s melted and gooey.
- Finish it off by mixing in the sour cream for a creamy texture. Season with salt and pepper to taste.
