Ingredients
Scale
1 cup cornmeal
1 cup all-purpose flour
2 tablespoons sugar (or honey)
1 tablespoon baking powder
½ teaspoon salt
1 cup milk (dairy or non-dairy)
2 large eggs
¼ cup melted butter (or a plant-based alternative)
½ cup shredded cheese (optional)
¼ cup corn kernels (optional)
1 tablespoon chopped herbs (optional)
Instructions
Preheat your waffle maker according to the manufacturer’s instructions.
In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined.
In a separate bowl, mix the milk, eggs, and melted butter thoroughly.
Pour the wet mixture into the dry ingredients. Stir gently until just combined; don’t overmix!
If you’re using cheese, corn, or herbs, fold them into the batter for an extra flavor kick.
Pour enough batter into the preheated waffle maker to cover the cooking surface without overflowing. Close the lid and cook until golden brown, usually about 3-5 minutes.
Carefully remove from the waffle maker, and serve warm with your choice of toppings.
Continue the process until all the batter is used up.
Notes
For a more natural sweetness, substitute sugar with honey.
Feel free to experiment with different types of cheese or herbs.
These waffle bites can be served with various toppings like syrup, butter, or salsa.
