- 1 cup unsalted butter, softened
- 1 cup granulated sugar, plus extra for rolling
- 1/2 cup molasses
- 1 large egg
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- Cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
- Add in the molasses, egg, and vanilla extract, and beat until well combined.
- In another bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Cover the dough with plastic wrap and chill in the refrigerator for about 30 minutes.
- Scoop out tablespoon-sized portions of dough and roll them into balls, then roll in extra granulated sugar.
- Place the sugar-coated dough balls on the prepared baking sheets, leaving about 2 inches between each cookie.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- Let the cookies cool on the baking sheets for about 5 minutes before transferring to a wire rack to cool completely.

- For a spicier flavor, increase the amount of ground ginger.
