Ingredients

  • 4 large bell peppers (any color you like)
  • 1 pound ground beef or turkey
  • 1 cup cooked rice (white or brown)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. Slice the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet over medium heat, add olive oil and sauté the chopped onion for 3-4 minutes until soft.
  4. Add minced garlic and cook for another minute until fragrant.
  5. Add ground beef or turkey, breaking it up, and cook until browned (5-7 minutes). Drain excess fat if using beef.
  6. Stir in cooked rice, drained diced tomatoes, Italian seasoning, paprika, and season with salt and pepper. Cook for another 2-3 minutes.
  7. Spoon the filling into each bell pepper, packing it down gently.
  8. Place the stuffed peppers upright in a baking dish. Slice a tiny bit off the bottom if they wobble.
  9. Cover with aluminum foil and bake for 25 minutes.
  10. Remove foil, sprinkle cheese on top, and bake for another 10-15 minutes until cheese is melted and bubbly.
  11. Let cool for a few minutes, garnish with parsley or basil, and serve warm.
