- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/4 teaspoon salt
- 1 large egg yolk
- 2 tablespoons ice water
- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup heavy cream
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat your oven to 350°F. Lightly grease a muffin tin or use non-stick spray.
- In a mixing bowl, combine the flour, powdered sugar, and salt. Add the cold, cubed butter and mix until it resembles coarse crumbs.
- In a small bowl, whisk together the egg yolk and ice water. Gradually add this to the flour mixture, stirring until the dough comes together.
- Turn the dough out onto a lightly floured surface and shape it into a disk. Wrap it in plastic wrap and refrigerate for about 30 minutes.
- Roll out the dough to about 1/8-inch thickness. Cut out circles slightly larger than the muffin tin cups and press into the cups.
- Prick the bottom of each tartlet with a fork to prevent bubbling and bake for 15-18 minutes until lightly golden.
- Let the crusts cool in the tin for a few minutes before transferring to a wire rack to cool completely.
- In a medium saucepan, combine the sliced strawberries, granulated sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens, about 5-7 minutes.
- In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.
- Spoon the strawberry mixture into each cooled tartlet shell and top with whipped cream. Garnish with fresh mint leaves if desired.
- Serve immediately and enjoy!
