  • 2 tablespoons ice water
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 350°F. Lightly grease a muffin tin or use non-stick spray.
  2. In a mixing bowl, combine the flour, powdered sugar, and salt. Add the cold, cubed butter and mix until it resembles coarse crumbs.
  3. In a small bowl, whisk together the egg yolk and ice water. Gradually add this to the flour mixture, stirring until the dough comes together.
  4. Turn the dough out onto a lightly floured surface and shape it into a disk. Wrap it in plastic wrap and refrigerate for about 30 minutes.
  5. Roll out the dough to about 1/8-inch thickness. Cut out circles slightly larger than the muffin tin cups and press into the cups.
  6. Prick the bottom of each tartlet with a fork to prevent bubbling and bake for 15-18 minutes until lightly golden.
  7. Let the crusts cool in the tin for a few minutes before transferring to a wire rack to cool completely.
  8. In a medium saucepan, combine the sliced strawberries, granulated sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens, about 5-7 minutes.
  9. In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.
  10. Spoon the strawberry mixture into each cooled tartlet shell and top with whipped cream. Garnish with fresh mint leaves if desired.
  11. Serve immediately and enjoy!
