- 2 ribeye steaks (about 1 inch thick)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)
- 1 cup pumpkin puree (canned or homemade)
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- Fresh parsley, chopped (for garnish)
Instructions
- Let the ribeye steaks sit at room temperature for about 30 minutes. Season both sides with salt and pepper.
- In a medium saucepan over medium heat, combine pumpkin puree, heavy cream, nutmeg, and cinnamon. Stir until warm.
- Add grated Parmesan cheese to the pumpkin mixture and stir until melted and smooth. Keep on low heat.
- Heat a large skillet over medium-high heat and add olive oil. Once shimmering, add the steaks and sear for 4-5 minutes without moving.
- Flip the steaks, add butter and minced garlic to the pan, and baste the steaks with the melted butter. Cook for another 4-5 minutes for medium-rare.
- Remove the steaks from the skillet and let them rest for about 5 minutes.
- Spoon the Parmesan pumpkin puree onto each plate, slice the steaks against the grain, and place them on top of the puree.
- Drizzle any leftover garlic butter over the steaks and garnish with chopped parsley.

- Use a meat thermometer for precise cooking: 130°F for medium-rare.
- Letting the steaks rest is crucial for juiciness.
