  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)
  • 1 cup pumpkin puree (canned or homemade)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Let the ribeye steaks sit at room temperature for about 30 minutes. Season both sides with salt and pepper.
  2. In a medium saucepan over medium heat, combine pumpkin puree, heavy cream, nutmeg, and cinnamon. Stir until warm.
  3. Add grated Parmesan cheese to the pumpkin mixture and stir until melted and smooth. Keep on low heat.
  4. Heat a large skillet over medium-high heat and add olive oil. Once shimmering, add the steaks and sear for 4-5 minutes without moving.
  5. Flip the steaks, add butter and minced garlic to the pan, and baste the steaks with the melted butter. Cook for another 4-5 minutes for medium-rare.
  6. Remove the steaks from the skillet and let them rest for about 5 minutes.
  7. Spoon the Parmesan pumpkin puree onto each plate, slice the steaks against the grain, and place them on top of the puree.
  8. Drizzle any leftover garlic butter over the steaks and garnish with chopped parsley.
