Ingredients

  • 1 pound pork belly or pork shoulder, thinly sliced
  • 1 tablespoon vegetable oil
  • 1 medium onion, sliced
  • 1 medium carrot, julienned
  • 1 bell pepper (red or green), sliced
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons gochujang (Korean red chili paste)
  • 1 tablespoon gochugaru (Korean red pepper flakes)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. Marinate the pork by combining gochujang, gochugaru, soy sauce, sesame oil, sugar, rice vinegar, minced garlic, and ginger in a bowl. Mix until smooth.
  2. Toss in the sliced pork, ensuring each piece is well-coated. Let it marinate for at least 30 minutes, preferably in the fridge for a couple of hours or overnight.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork in a single layer and sear for 2-3 minutes without stirring.
  4. Stir-fry the pork for another 3-4 minutes until cooked through and slightly crispy.
  5. Add sliced onion, carrot, and bell pepper. Stir-fry for about 5 minutes until the veggies are tender but still crunchy.
  6. Add chopped green onions and stir well. Adjust seasoning with salt and pepper if needed.
  7. Serve hot, garnished with sesame seeds if desired, alongside steamed rice or wrapped in lettuce leaves.

Notes

  • For extra heat, add more gochugaru during cooking.
  • This dish can be served with steamed rice or as a lettuce wrap.
