12 ounces spaghetti
4 large eggs
1 cup grated Pecorino Romano cheese
4 ounces pancetta or guanciale, diced
2 cloves garlic, minced
Freshly cracked black pepper, to taste
Salt, for pasta water
Chopped fresh parsley, for garnish (optional)
Instructions
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve about 1 cup of the pasta cooking water, then drain the spaghetti and set it aside.
In a mixing bowl, whisk together the eggs and grated Pecorino Romano cheese until well combined. Set this mixture aside.
In a large skillet over medium heat, add the diced pancetta or guanciale. Cook until crispy and golden, about 4 to 5 minutes. Add the minced garlic and cook for an additional minute.
Add the cooked spaghetti directly to the skillet with the pancetta and garlic. Toss to combine.
Remove the skillet from heat and quickly pour in the egg and cheese mixture, tossing constantly to create a creamy sauce. Add reserved pasta water as needed to reach desired consistency.
Season with freshly cracked black pepper and adjust seasoning if necessary.
Serve immediately, garnished with extra Pecorino Romano cheese and chopped fresh parsley if desired.
Notes
Be careful not to let the garlic burn as it can become bitter.
Adjust the amount of pasta water based on your preferred sauce consistency.
For a vegetarian version, you can substitute pancetta with mushrooms.
