Instructions

  1. In a saucepan, bring the chicken broth to a boil.
  2. Add the gelatin, stirring until fully dissolved.
  3. Pour into a shallow dish and refrigerate until set (at least 1 hour).
  4. In a large mixing bowl, gradually combine the flour and hot water, mixing until it forms a dough.
  5. Knead the dough on a floured surface for about 10 minutes until smooth. Cover and rest for 30 minutes.
  6. In a bowl, blend ground chicken, soy sauce, sesame oil, ginger, salt, and pepper, mixing until fully combined.
  7. Roll the dough into a log and cut into small pieces (about the size of a walnut).
  8. Flatten each piece into a circle, about 3 inches in diameter.
  9. Place a tablespoon of chicken filling in the center, followed by a small piece or spoonful of the set broth.
  10. Carefully pleat the edges, sealing the dumpling at the top.
  11. Line a bamboo steamer with parchment paper and arrange the dumplings inside, ensuring they’re not touching.
  12. Steam over boiling water for about 8-10 minutes.
