Sopapilla Cheesecake Bars

Ingredients:

  • 2 cans (8 oz each) refrigerated crescent roll dough
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, melted
  • 1/2 cup cinnamon sugar (1/2 cup sugar mixed with 1 tablespoon cinnamon)

Directions:

  1. Preheat your oven to 350°F (175°C). Unroll one can of crescent roll dough and press it into the bottom of a 9×13 inch baking dish, stretching to fit.
  2. In a medium bowl, beat together the cream cheese, sugar, and vanilla extract until smooth and creamy.
  3. Spread the cream cheese mixture evenly over the crescent roll layer in the baking dish.
  4. Unroll the second can of crescent roll dough and place it over the cream cheese layer.
  5. Pour the melted butter evenly over the top crescent roll layer, and then sprinkle the cinnamon sugar generously over the butter.
  6. Bake in the preheated oven for about 30-35 minutes, or until the crescent rolls have puffed up slightly and turned golden brown.
  7. Allow to cool completely in the pan before slicing into bars.
