  • 1 tablespoon chipotle chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup tortilla chips, crushed
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (for serving)

Instructions

  1. Preheat your oven to 375°F. Grease a 9×13-inch baking dish with a little cooking spray or olive oil.
  2. In a large skillet over medium heat, add the olive oil and warm it up. Sauté the chopped onion for about 3-4 minutes until soft and translucent, then add the minced garlic and cook for another minute.
  3. Add the diced chicken to the skillet, seasoning it with chipotle chili powder, cumin, smoked paprika, salt, and black pepper. Cook for about 5-7 minutes until browned and cooked through.
  4. Stir in the black beans, corn, and diced tomatoes with their juices. Let it simmer for about 5 minutes.
  5. Transfer the chicken mixture into the prepared baking dish, spreading it out evenly. Sprinkle the crushed tortilla chips and shredded cheddar cheese on top.
