  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional for heat)
  • 1 cup apple juice (for spritzing)
  • Wood chips for smoking (hickory or applewood work great)

Instructions

  1. Prep the pork loin by rinsing it under cold water and patting it dry with paper towels.
  2. In a small bowl, mix together olive oil, brown sugar, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and cayenne pepper.
  3. Rub the mixture all over the pork loin, ensuring it gets into all the nooks and crannies.
  4. Wrap the pork loin in plastic wrap and let it sit in the fridge for at least an hour, or overnight.
  5. Preheat your smoker to 225°F or set up a charcoal grill for indirect heat with wood chips.
  6. Let the pork loin come to room temperature while the smoker heats up.
  7. Place the pork loin directly on the grill grate and smoke for about 2 to 3 hours, or until the internal temperature reaches 145°F.
  8. Every 30 to 45 minutes, spritz the pork loin with apple juice.
  9. Once the pork loin reaches the perfect temperature, remove it from the smoker and let it rest for 15 to 20 minutes.
  10. Slice and serve with your favorite sides.
