- 4 boneless, skinless chicken breasts
- 1 cup salsa (your favorite brand or homemade)
- 1 packet taco seasoning (about 1 ounce)
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup shredded cheddar cheese
- 1/4 cup fresh cilantro, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Start by placing the chicken breasts at the bottom of your slow cooker, laid out evenly.
- In a separate bowl, mix together the salsa and taco seasoning, then pour it over the chicken.
- Add the drained black beans and corn on top of the salsa-covered chicken without stirring.
- Cover the slow cooker and set it to low for 6 to 8 hours or high for 3 to 4 hours.
- Once cooked, remove the chicken and shred it using two forks.
- Return the shredded chicken to the slow cooker and stir to combine with the beans, corn, and salsa.
- Sprinkle shredded cheddar cheese on top, cover, and let it sit for about 10 minutes until the cheese melts.
- Serve over rice, in tacos, or on a bed of greens, garnished with fresh cilantro.
Notes
- For a spicier dish, use a hot salsa or add jalapeños.
- This recipe can be easily doubled for larger gatherings.
- Leftovers can be stored in the refrigerator for up to 3 days.
