  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 pound large shrimp, peeled and deveined
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup dry white wine (like Sauvignon Blanc)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1/4 cup chopped fresh parsley
  • Grated Parmesan cheese, for serving

Instructions

  1. Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set it aside.
  2. In a large skillet over medium heat, add the olive oil and 2 tablespoons of butter. Once the butter has melted and is bubbling, add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
  3. Add the shrimp to the skillet, seasoning them with red pepper flakes, salt, and black pepper. Cook for about 2-3 minutes on one side until they turn pink, then flip them over and cook for another 2-3 minutes until fully cooked through.
  4. Pour in the white wine and let it simmer for about 2 minutes, allowing the alcohol to cook off and the flavors to meld. Stir in the lemon juice and zest, and then add the remaining 2 tablespoons of butter, stirring until melted and combined.
  5. Add the drained pasta to the skillet, tossing everything together. If the pasta seems dry, gradually add some of the reserved pasta water until you reach your desired consistency.
  6. Finally, stir in the chopped parsley for a fresh touch. Taste and adjust the seasoning if needed.
  7. Serve the shrimp scampi pasta hot, topped with a generous sprinkle of grated Parmesan cheese.

Notes

  • Be careful not to overcook the shrimp, or they’ll get tough.
  • Adjust the amount of red pepper flakes according to your spice preference.
