- 4 cloves garlic, minced

Instructions
- Preheat your oven to 400°F (200°C).
- Pat the rack of lamb dry with paper towels.
- In a bowl, mix the olive oil, minced garlic, chopped rosemary, thyme, salt, and pepper.
- Rub the herb mixture all over the lamb, covering all sides. Optionally, smear Dijon mustard on the meat before applying the herbs.
- Place the rack of lamb in a roasting pan bone-side down.
- Roast in the preheated oven for about 25 minutes for medium-rare doneness (adjust timing according to your desired level of doneness).
- Let the lamb rest for at least 10 minutes after removing it from the oven.
- Carefully slice between the bones to create individual chops and serve them warm.
