- 1 cup fresh figs, halved
- 1 tablespoon olive oil
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pre-made flatbread or naan
- 1 cup cottage cheese
- 1/4 cup crumbled feta cheese
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 tablespoon balsamic glaze (optional)
- Fresh arugula or spinach for topping (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the halved figs with olive oil, honey, salt, and black pepper in a mixing bowl.
- Spread the figs cut side up on the prepared baking sheet and roast for 15-20 minutes until soft and caramelized.
- Place the flatbread or naan on another baking sheet and warm it in the oven for 5-7 minutes.
- In a bowl, mix together the cottage cheese and crumbled feta cheese.
- Spread the cottage cheese mixture evenly over the warm flatbread.
- Arrange the roasted figs on top of the cottage cheese mixture.
- Sprinkle fresh thyme leaves over the figs and drizzle with balsamic glaze if desired.
- Top with fresh arugula or spinach, slice, and serve warm.

- Keep an eye on the figs while roasting to prevent burning.
