A delicious and easy-to-make icebox cake featuring layers of Ritz crackers, creamy filling, and salted caramel.

- 2 sleeves Ritz crackers
- 1 cup heavy whipping cream
- 1 package cream cheese, softened (8 oz)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup salted caramel sauce for drizzling
- Sea salt, for garnish (optional)
Instructions
- In a large mixing bowl, use an electric mixer to combine the softened cream cheese and powdered sugar until smooth and creamy. Add the vanilla extract and mix until fully incorporated.
- In another bowl, beat the heavy whipping cream with an electric mixer until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
- Start by laying down a single layer of Ritz crackers at the bottom of a rectangular dish. Spread a layer of the cream filling over the crackers, then drizzle some salted caramel sauce on top.
- Continue layering Ritz crackers, cream filling, and caramel sauce until you’ve used all the ingredients. The final layer should be the cream filling.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the cake to set.
- Before serving, garnish with a sprinkle of sea salt for an extra flavor kick. Slice and serve chilled.
Notes
- For best results, refrigerate overnight.
- Feel free to adjust the amount of salted caramel sauce to your taste.
