Description

Ricotta Polpette are delicious Italian cheese balls made with fresh ricotta, Parmesan, and herbs, perfect as an appetizer or main dish.

Ingredients

Scale
  • 1 cup fresh ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 cup breadcrumbs (plus extra for coating)
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup marinara sauce (for serving)
  • Olive oil (for frying)

Instructions

  1. Gather all your ingredients and set up a clean workspace.
  2. In a large mixing bowl, combine the ricotta cheese, grated Parmesan, and egg. Mix until smooth.
  3. Add breadcrumbs, chopped parsley, minced garlic, salt, black pepper, and red pepper flakes. Mix until cohesive.
  4. Wet your hands and scoop out about a tablespoon of the mixture. Roll into a ball and coat with extra breadcrumbs.
  5. Repeat until all mixture is used, yielding about 12 to 15 polpette.
  6. Heat olive oil in a large skillet over medium heat.
  7. Add polpette to the pan, frying for 3 to 4 minutes on each side until golden brown.
  8. Transfer cooked polpette to a paper towel-lined plate to drain excess oil.
  9. Serve warm with marinara sauce for dipping.

Notes

  • Adjust the amount of breadcrumbs if the mixture feels too wet.
  • Fry in batches to avoid overcrowding the skillet.
  • These can be served as an appetizer or a main dish.
